Ingredients
- 4 zucchini, sliced
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Directions
- Preheat a grill pan or outdoor grill to medium-high heat.
- In a large bowl, combine the olive oil, balsamic vinegar, garlic, oregano, basil, salt and pepper.
- Add the zucchini slices, and toss to coat.
- Grill the zucchini slices for 4-5 minutes per side, or until the zucchini is cooked through.
- Serve hot.
