Ingredients

  • 1/2 cup butter, melted
  • 1 cup light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup canned pumpkin
  • 1 teaspoon pumpkin pie spice
  • 1/4 cup white sugar
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat oven to 350°F (175°C). Grease an 8×8-inch baking pan.
  2. In a medium bowl, combine melted butter, light brown sugar, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, combine flour, baking powder, and salt. Gradually add dry ingredients to the wet ingredients, stirring until just combined.
  4. Spread the batter into the prepared pan. In a small bowl, mix together pumpkin, pumpkin pie spice, white sugar, and cinnamon. Drop spoonfuls of the mixture over the blondie batter.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool before cutting into bars.
