Ingredients

  • 2 tablespoons butter
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 2 stalks celery, diced
  • 2 cups potatoes, peeled and diced
  • 4 cups vegetable broth
  • 2 cups corn kernels
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • Salt, to taste

Directions

  1. In a large pot, melt butter over medium-high heat. Add the onion, garlic, and celery and cook until softened, about 5 minutes.
  2. Add the potatoes and vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes, or until the potatoes are tender.
  3. Add the corn and cook for another 5 minutes.
  4. In a small bowl, whisk together the flour and milk until smooth. Add the mixture to the pot and stir to combine.
  5. Add the thyme, black pepper, cayenne pepper, and salt, and stir to combine. Simmer for 10 minutes, or until the soup has thickened.
  6. Serve hot.
