Ingredients

  • 1 9-inch store-bought or homemade pie crust
  • ½ cup of semi-sweet chocolate chips
  • 2 tablespoons of instant espresso powder
  • 2 tablespoons of cornstarch
  • 2 large eggs, beaten
  • 1 cup of light brown sugar
  • 1 cup of chopped walnuts
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of salt

Directions

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Unroll the pie crust and press into a 9-inch pie plate.
  3. In a medium bowl, combine the chocolate chips, espresso powder, and cornstarch.
  4. In a separate bowl, mix the eggs, sugar, walnuts, vanilla extract, cinnamon, and salt together until combined.
  5. Add the wet ingredients to the dry and stir until fully combined.
  6. Pour the mixture into the prepared pie crust.
  7. Bake for 30-35 minutes, or until the center is just set.
  8. Allow to cool for 10 minutes before serving.
