Ingredients

  • 2 large zucchini, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the zucchini, garlic, salt, and pepper. Cook, stirring occasionally, for about 5 minutes or until zucchini is tender.
  3. Add the cream and Parmesan cheese. Stir to combine and cook for about 3 minutes or until the sauce is thickened.
  4. Stir in the parsley and serve.
