Ingredients
- 1 large onion, peeled and roughly chopped
- 2 cloves garlic, peeled and minced
- 2 carrots, peeled and roughly chopped
- 2 stalks celery, roughly chopped
- 2 potatoes, peeled and roughly chopped
- 1 large tomato, roughly chopped
- 1 cup fresh parsley, roughly chopped
- 4 cups vegetable broth
- Salt and pepper to taste
Directions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the onion and garlic and sauté for 2-3 minutes, stirring frequently.
- Add the carrots, celery, potatoes, tomato, and parsley and sauté for 3-4 minutes.
- Add the vegetable broth and bring to a boil.
- Reduce heat to low and simmer for 30 minutes.
- Season with salt and pepper to taste.
