Ingredients

  • 1 cup cooked wild rice
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup
  • 2 tablespoons coconut oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350°F (180°C). Grease an 8-inch (20 cm) square baking pan.
  2. In a medium bowl, combine the cooked wild rice, pumpkin puree, maple syrup, coconut oil, spices, and salt. Mix well.
  3. Pour the mixture into the prepared baking pan and spread evenly.
  4. Sprinkle the chopped walnuts evenly over the top.
  5. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cool before cutting into bars.
