Ingredients

  • 1 tablespoon coconut oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup broccoli florets
  • 1/2 cup snow peas
  • 1/2 cup mushrooms, sliced
  • 1/4 cup coconut aminos
  • 1 tablespoon fish sauce
  • 1 teaspoon sriracha sauce
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground black pepper
  • 2 cups cooked white rice
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the coconut oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 1 minute.
  2. Add the bell pepper, broccoli, snow peas, and mushrooms and cook, stirring, for 3 minutes.
  3. Add the coconut aminos, fish sauce, sriracha, ginger, turmeric, and pepper and stir to combine. Cook for 2 minutes.
  4. Add the cooked rice and stir to combine. Cook for 2 minutes.
  5. Remove from the heat and stir in the cilantro.
  6. Serve hot.
