Ingredients
1 tablespoon coconut oil
2 cloves garlic, minced
1 red bell pepper, diced
1/2 cup broccoli florets
1/2 cup snow peas
1/2 cup mushrooms, sliced
1/4 cup coconut aminos
1 tablespoon fish sauce
1 teaspoon sriracha sauce
1/4 teaspoon ground ginger
1/4 teaspoon ground turmeric
1/4 teaspoon ground black pepper
2 cups cooked white rice
2 tablespoons chopped fresh cilantro
Directions
Heat the coconut oil in a large skillet over medium-high heat. Add the garlic and cook, stirring, for 1 minute.
Add the bell pepper, broccoli, snow peas, and mushrooms and cook, stirring, for 3 minutes.
Add the coconut aminos, fish sauce, sriracha, ginger, turmeric, and pepper and stir to combine. Cook for 2 minutes.
Add the cooked rice and stir to combine. Cook for 2 minutes.
Remove from the heat and stir in the cilantro.
Serve hot.
