Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup vegetable oil
  • 1 large egg

Directions

  1. Preheat the oven to 350°F and prepare a muffin tin by spraying it with cooking spray or lining it with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a separate bowl, whisk together the pumpkin puree, applesauce, honey, vegetable oil, and egg until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not over mix.
  5. Using a scoop or spoon, fill each muffin cup with the batter until it is almost full.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
