Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup plain Greek yogurt
  • 1/4 cup vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh or frozen blueberries

Directions

  1. Preheat your oven to 375 degrees F.
  2. In a medium bowl, mix together the flour, oats, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the yogurt, oil and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the blueberries.
  6. Line a 12-cup muffin tin with paper liners and fill each cup with the batter.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool before serving.
