Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup plain Greek yogurt
- 1/4 cup vegetable oil
- 1 teaspoon pure vanilla extract
- 1 cup fresh or frozen blueberries
Directions
- Preheat your oven to 375 degrees F.
- In a medium bowl, mix together the flour, oats, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the yogurt, oil and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the blueberries.
- Line a 12-cup muffin tin with paper liners and fill each cup with the batter.
- Bake for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool before serving.
