Ingredients

  • 3 cups cubed cooked chicken
  • 2 cups diced tomatoes
  • 1 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup diced celery
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup barbecue sauce
  • 1/4 cup light mayonnaise
  • 2 tablespoons fresh cilantro, chopped
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the chicken, tomatoes, cucumber, red onion, celery, and cheddar cheese.
  2. In a separate bowl, whisk together the barbecue sauce, mayonnaise, and cilantro.
  3. Pour the sauce over the chicken and vegetables and mix until everything is evenly coated.
