Ingredients
- 1 butternut squash, peeled and diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Directions
- Preheat oven to 425 degrees F.
- Spread the diced butternut squash on a baking sheet and drizzle with olive oil.
- Sprinkle with garlic powder, onion powder, paprika, cumin, salt and pepper.
- Roast for 25-30 minutes, stirring once halfway through.
- Let cool for a few minutes and then transfer to a large bowl.
- Using a hand mixer, whip the squash until light and fluffy.
- Add in the heavy cream and Parmesan cheese and mix until combined.
- Serve warm.
