Ingredients

  • 1 butternut squash, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese

Directions

  1. Preheat oven to 425 degrees F.
  2. Spread the diced butternut squash on a baking sheet and drizzle with olive oil.
  3. Sprinkle with garlic powder, onion powder, paprika, cumin, salt and pepper.
  4. Roast for 25-30 minutes, stirring once halfway through.
  5. Let cool for a few minutes and then transfer to a large bowl.
  6. Using a hand mixer, whip the squash until light and fluffy.
  7. Add in the heavy cream and Parmesan cheese and mix until combined.
  8. Serve warm.
