Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 head romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup chopped fresh parsley

Directions

  1. In a large bowl, combine the shrimp, olive oil, lemon juice, garlic, salt, and pepper. Toss to combine.
  2. Heat a large skillet over medium-high heat. Add the shrimp and cook until just cooked through, about 3-4 minutes. Remove from the heat.
  3. In a large bowl, combine the lettuce, tomatoes, onion, feta cheese, and parsley. Add the cooked shrimp and toss to combine.
  4. Divide the salad among 4 plates and serve.
