Ingredients
- 2 lbs beef stew meat, cut into bite-sized pieces
- 2 tablespoons vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 carrots, peeled and sliced
- 3 potatoes, peeled and cubed
- 2 cups beef broth
- 1 cup red wine
- 1 can diced tomatoes, undrained
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Directions
- Heat the vegetable oil in a large pot or Dutch oven over medium heat.
- Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
- Return the beef stew meat to the pot and add the carrots, potatoes, beef broth, red wine, diced tomatoes, bay leaves, dried thyme, paprika, salt, and black pepper.
- Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 2 hours, or until the beef is tender and the flavors are well combined.
