Ingredients

  • 2 cups beef broth
  • 1 cup red wine
  • 1 can diced tomatoes, undrained
  • 2 bay leaves

  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
  3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent and fragrant.
  4. Return the beef stew meat to the pot and add the carrots, potatoes, beef broth, red wine, diced tomatoes, bay leaves, dried thyme, paprika, salt, and black pepper.
  5. Bring the stew to a boil, then reduce the heat to low. Cover the pot and let the stew simmer for 2 hours, or until the beef is tender and the flavors are well combined.
  6. Remove the bay leaves from the stew.
  7. Garnish with fresh parsley and serve hot with crusty bread.
