Ingredients

  • 1 pound dried northern white beans
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 6 cups vegetable broth
  • 2 cups water
  • 2 cups diced ham
  • Salt and pepper to taste

Directions

  1. Rinse and sort the dried northern white beans.
  2. In a slow cooker, combine the beans, onion, carrots, celery, garlic, bay leaf, thyme, rosemary, vegetable broth, and water.
  3. Cook on low heat for 8 hours or on high heat for 4-5 hours, until the beans are tender.
  4. Remove the bay leaf and discard.
  5. Using a ladle, scoop out about half of the soup and blend until smooth. Return the blended soup to the slow cooker and stir to combine.
  6. Add the diced ham to the slow cooker and cook for an additional 30 minutes on low heat or 15 minutes on high heat.
  7. Season with salt and pepper to taste.
  8. Serve hot with crusty bread.
