Ingredients
- 1 cup chickpeas, drained and rinsed
- 1/2 onion, finely chopped
- 1/3 cup parsley, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- 1/4 teaspoon ground pepper
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/4 cup all-purpose flour
- Oil for waffle iron
Directions
- In a food processor, combine the chickpeas, onion, parsley, garlic, cumin, coriander, baking powder, pepper, and salt. Pulse until the mixture is combined but still chunky.
- Add the olive oil, lemon juice, and flour and mix until the ingredients are well combined.
- Heat a waffle iron on medium heat and brush with oil. Place about 1/4 cup of the falafel mixture in the center of the iron and spread evenly. Close the lid and cook for about 4 minutes or until golden brown.
- Carefully remove the waffled falafel from the iron and repeat with the remaining mixture.
- Serve the waffled falafel warm with your favorite dipping sauce.
