Ingredients

  • 1 cup chickpeas, drained and rinsed
  • 1/2 onion, finely chopped
  • 1/3 cup parsley, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground pepper
  • 1/4 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • Oil for waffle iron

Directions

  1. In a food processor, combine the chickpeas, onion, parsley, garlic, cumin, coriander, baking powder, pepper, and salt. Pulse until the mixture is combined but still chunky.
  2. Add the olive oil, lemon juice, and flour and mix until the ingredients are well combined.
  3. Heat a waffle iron on medium heat and brush with oil. Place about 1/4 cup of the falafel mixture in the center of the iron and spread evenly. Close the lid and cook for about 4 minutes or until golden brown.
  4. Carefully remove the waffled falafel from the iron and repeat with the remaining mixture.
  5. Serve the waffled falafel warm with your favorite dipping sauce.
