Ingredients
1/2 cup butter
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
2 cups heavy cream
2 cups crushed saltine crackers
1/2 cup chopped pecans (optional)
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
Melt the butter in a saucepan over medium heat. Stir in the sugar and vanilla extract until dissolved.
Mix in the eggs and cream. Add the crushed crackers and mix until combined.
Pour the cracker mixture into the prepared baking dish. Sprinkle with chopped pecans if desired.
Bake for 25 to 30 minutes in the preheated oven, until golden brown and set.
