Ingredients
- 1/2 pound rotini pasta
- 1/2 cup red bell pepper, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup purple onion, diced
- 1/2 cup mayonnaise
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 2 tablespoons fresh basil, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Directions
- Cook the rotini pasta according to the package instructions.
- Drain and rinse the pasta with cold water. Place in a large bowl.
- Add the red, yellow and green bell peppers and the purple onion to the bowl with the pasta.
- In a small bowl, mix together the mayonnaise, olive oil, red wine vinegar, basil, garlic powder, salt and pepper.
- Pour the dressing over the pasta and vegetables and stir to combine.
- Chill for at least 1 hour before serving.
