Ingredients

  • 1/2 lb. small pasta (such as shells, rotini, or macaroni)
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 1/3 cup olive oil
  • 2 tablespoons Dijon mustard
  • 1 tablespoon white wine vinegar
  • Salt and pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the pasta and cook according to the package instructions.
  3. Drain the pasta and rinse with cold water until cool.
  4. Transfer the pasta to a large bowl and add the bell peppers, cucumber, red onion, parsley, and basil.
  5. In a small bowl, whisk together the olive oil, mustard, white wine vinegar, salt, and pepper.
  6. Pour the dressing over the pasta and vegetables and stir to combine.
  7. Serve the salad chilled or at room temperature.
