Ingredients
- 1/2 lb. small pasta (such as shells, rotini, or macaroni)
- 1/2 cup diced red bell pepper
- 1/2 cup diced green bell pepper
- 1/2 cup diced cucumber
- 1/2 cup diced red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh basil
- 1/3 cup olive oil
- 2 tablespoons Dijon mustard
- 1 tablespoon white wine vinegar
- Salt and pepper, to taste
Directions
- Bring a large pot of salted water to a boil over high heat.
- Add the pasta and cook according to the package instructions.
- Drain the pasta and rinse with cold water until cool.
- Transfer the pasta to a large bowl and add the bell peppers, cucumber, red onion, parsley, and basil.
- In a small bowl, whisk together the olive oil, mustard, white wine vinegar, salt, and pepper.
- Pour the dressing over the pasta and vegetables and stir to combine.
- Serve the salad chilled or at room temperature.
