Ingredients
- 1 whole duck, cleaned and chopped into small pieces
- 2 tablespoons olive oil
- 2 cloves garlic, minced

- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika

- 1 teaspoon sea salt
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/4 cup balsamic vinegar
- 1/4 cup brown sugar
- 1/4 cup water
Directions
- Preheat oven to 375°F.
- In a large mixing bowl, combine the olive oil, garlic, ginger, thyme, smoked paprika, cumin, and sea salt. Mix well.
- Add the duck pieces and mix to evenly coat the duck with the spices and herbs. Place the duck on a baking sheet lined with parchment paper.
- Bake the duck in the preheated oven for 25 minutes, or until the duck is golden brown and cooked through.
- Meanwhile, in a medium-sized saucepan, combine the honey, soy sauce, balsamic vinegar, brown sugar, and water. Bring to a boil and reduce to a simmer. Simmer for 10 minutes, or until the mixture has reduced and thickened.
- Remove the duck from the oven and brush with the honey glaze. Return to the oven and bake for an additional 5 minutes.
- Remove the duck from the oven and let cool for 5 minutes before serving.
