Ingredients

  • 1 whole duck, cleaned and chopped into small pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon sea salt
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 1/4 cup balsamic vinegar
  • 1/4 cup brown sugar
  • 1/4 cup water

Directions

  1. Preheat oven to 375°F.
  2. In a large mixing bowl, combine the olive oil, garlic, ginger, thyme, smoked paprika, cumin, and sea salt. Mix well.
  3. Add the duck pieces and mix to evenly coat the duck with the spices and herbs. Place the duck on a baking sheet lined with parchment paper.
  4. Bake the duck in the preheated oven for 25 minutes, or until the duck is golden brown and cooked through.
  5. Meanwhile, in a medium-sized saucepan, combine the honey, soy sauce, balsamic vinegar, brown sugar, and water. Bring to a boil and reduce to a simmer. Simmer for 10 minutes, or until the mixture has reduced and thickened.
  6. Remove the duck from the oven and brush with the honey glaze. Return to the oven and bake for an additional 5 minutes.
  7. Remove the duck from the oven and let cool for 5 minutes before serving.
