Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons minced fresh ginger
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 teaspoon cayenne pepper
- 2 tablespoons cornstarch
- 2 tablespoons water

Directions
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and cook, stirring occasionally, until the onion is softened and lightly browned.
- Add the ginger and cook for an additional minute.
- Add the vegetable broth, soy sauce, and cayenne pepper and bring to a boil. Reduce the heat and simmer for 10 minutes.
- In a small bowl, whisk together the cornstarch and water until smooth. Stir the cornstarch mixture into the soup and cook for an additional 2 minutes, stirring constantly.
- Season to taste with salt and pepper.
