Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon ground black pepper
  • 2 cups vegetable broth
  • 2 15-ounce cans cannellini beans, drained and rinsed
  • 4 cups kale, chopped
  • 1/4 cup freshly-grated Parmesan cheese

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the oregano, thyme, cayenne pepper, and black pepper and cook for 1 minute.
  4. Add the vegetable broth and bring to a boil.
  5. Add the beans and kale and simmer until the kale is tender, about 10 minutes.
  6. Stir in the Parmesan cheese and serve.
