Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon cayenne pepper

- 2 cups vegetable broth
- 2 15-ounce cans cannellini beans, drained and rinsed
- 4 cups kale, chopped
- 1/4 cup freshly-grated Parmesan cheese
Directions
- In a large pot, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the oregano, thyme, cayenne pepper, and black pepper and cook for 1 minute.
- Add the vegetable broth and bring to a boil.
- Add the beans and kale and simmer until the kale is tender, about 10 minutes.
- Stir in the Parmesan cheese and serve.
