Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 zucchini, diced
  • 2 carrots, diced
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt and black pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the bell peppers, zucchini and carrots and cook for 5 minutes.
  4. Add the beans, tomatoes, tomato sauce, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper, salt and black pepper and stir to combine.
  5. Bring to a simmer and cook for 25 minutes, stirring occasionally.
  6. Serve and enjoy!
