Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 green bell pepper, diced
1 zucchini, diced
2 carrots, diced
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (14.5 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Salt and black pepper, to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the bell peppers, zucchini and carrots and cook for 5 minutes.
Add the beans, tomatoes, tomato sauce, chili powder, cumin, smoked paprika, garlic powder, cayenne pepper, salt and black pepper and stir to combine.
Bring to a simmer and cook for 25 minutes, stirring occasionally.
Serve and enjoy!
