Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1 cup fresh blueberries

Directions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugars until light and fluffy. Beat in the egg and vanilla.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Fold in the almond flour and blueberries until evenly distributed.
  6. Drop spoonfuls of dough onto the prepared baking sheets, about 2 inches apart. Bake for 12-15 minutes, or until the edges are lightly golden.
  7. Let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
