Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 pound beef stew meat, cubed
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery and sauté until the vegetables are softened, about 5 minutes.
  2. Add the beef and cook until lightly browned, about 5 minutes more. Add the tomato paste and stir to combine.
  3. Add the beef broth, thyme, oregano, salt, and pepper and bring to a boil. Reduce the heat to low and simmer for 30 minutes, or until the beef is tender.
  4. In a small bowl, whisk together the cornstarch and cold water. Pour the mixture into the stew and stir until the stew has thickened, about 5 minutes.
