Roasted Turkey Breast with Herbs
Ingredients
1 package of Chinese noodles
1/2 cup of sliced carrots
1 cup of sliced mushrooms
1/2 cup of sliced bell peppers
1/2 cup of snow peas
1/2 cup of sliced onion
1/4 cup of soy sauce
1/4 cup of sesame oil
2 cloves of minced garlic
1 teaspoon of sugar
1 teaspoon of white pepper
2 tablespoons of vegetable oil
Optional: handful of fresh chopped cilantro and/or scallions
Directions
Cook the noodles according to the package instructions. Once they are cooked, drain them and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and stir for a few seconds.
Add the carrots, mushrooms, bell peppers, and snow peas, and stir-fry for about 4-5 minutes, or until the vegetables are tender.
Add the cooked noodles and onion, and stir-fry for another minute.
In a small bowl, whisk together the soy sauce, sesame oil, sugar, and white pepper, then add to the skillet and stir-fry for another minute.
Add the fresh cilantro and/or scallions, if desired, and stir-fry for a few more minutes.
Serve the Veggie Lo Mein warm.
