Ingredients

  • 1 package of Chinese noodles
  • 1/2 cup of sliced carrots
  • 1 cup of sliced mushrooms
  • 1/2 cup of sliced bell peppers
  • 1/2 cup of snow peas
  • 1/2 cup of sliced onion
  • 1/4 cup of soy sauce
  • 1/4 cup of sesame oil
  • 2 cloves of minced garlic
  • 1 teaspoon of sugar
  • 1 teaspoon of white pepper
  • 2 tablespoons of vegetable oil
  • Optional: handful of fresh chopped cilantro and/or scallions

Directions

  1. Cook the noodles according to the package instructions. Once they are cooked, drain them and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and stir for a few seconds.
  3. Add the carrots, mushrooms, bell peppers, and snow peas, and stir-fry for about 4-5 minutes, or until the vegetables are tender.
  4. Add the cooked noodles and onion, and stir-fry for another minute.
  5. In a small bowl, whisk together the soy sauce, sesame oil, sugar, and white pepper, then add to the skillet and stir-fry for another minute.
  6. Add the fresh cilantro and/or scallions, if desired, and stir-fry for a few more minutes.
  7. Serve the Veggie Lo Mein warm.
