Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cubed pumpkin
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can red kidney beans, rinsed and drained
- 1 cup vegetable broth
- 2 cups fresh spinach, chopped
- Optional toppings: sour cream, cheese, cilantro, lime wedges
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic, and cook until the onion is tender, about 5 minutes.
- Add the pumpkin, cumin, chili powder, smoked paprika, salt, and pepper and cook, stirring, for 2 minutes.
- Add the tomatoes, beans, and broth, and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 10 minutes.
- Stir in the spinach and cook for an additional 5 minutes.
- Serve with your favorite toppings.
