Ingredients
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 cups cubed pumpkin
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (14.5 ounce) can diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can red kidney beans, rinsed and drained
1 cup vegetable broth
2 cups fresh spinach, chopped
Optional toppings: sour cream, cheese, cilantro, lime wedges
Directions
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic, and cook until the onion is tender, about 5 minutes.
Add the pumpkin, cumin, chili powder, smoked paprika, salt, and pepper and cook, stirring, for 2 minutes.
Add the tomatoes, beans, and broth, and bring to a boil.
Reduce the heat to low, cover the pot, and simmer for 10 minutes.
Stir in the spinach and cook for an additional 5 minutes.
Serve with your favorite toppings.
