Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cubed pumpkin
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can red kidney beans, rinsed and drained
  • 1 cup vegetable broth
  • 2 cups fresh spinach, chopped
  • Optional toppings: sour cream, cheese, cilantro, lime wedges

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and cook until the onion is tender, about 5 minutes.
  3. Add the pumpkin, cumin, chili powder, smoked paprika, salt, and pepper and cook, stirring, for 2 minutes.
  4. Add the tomatoes, beans, and broth, and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 10 minutes.
  6. Stir in the spinach and cook for an additional 5 minutes.
  7. Serve with your favorite toppings.
