Ingredients

  • 1 pound of fresh asparagus
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • 1 tablespoon of lemon juice
  • 1 teaspoon of salt
  • ½ teaspoon of black pepper

Directions

  1. Wash the asparagus and cut off the tough ends.
  2. Put the asparagus in a large pot and cover with water. Bring to a boil and cook for 5 minutes.
  3. Drain the asparagus and transfer to a blender. Add the cream, butter, lemon juice, salt, and pepper.
  4. Blend until smooth and creamy.
  5. Transfer the mousse to a bowl and chill in the refrigerator for at least 2 hours.
  6. Serve chilled.
