Ingredients

  • 1 tablespoon olive oil
  • 2 bell peppers, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground cinnamon
  • Salt and pepper, to taste
  • 1 (14-ounce) can diced tomatoes, drained
  • 1/2 cup crumbled feta cheese

Directions

  1. Preheat oven to 400°F.
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add bell peppers, onion, garlic, oregano, thyme, red pepper flakes, cumin, coriander, cinnamon, salt and pepper. Cook, stirring occasionally, until vegetables are softened, about 7-8 minutes.
  3. Stir in diced tomatoes and feta cheese. Transfer skillet to oven and bake until cheese is melted and vegetables are tender, about 15-20 minutes.
  4. Serve warm.
