Ingredients
- 1 tablespoon olive oil
- 2 bell peppers, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- Salt and pepper, to taste
- 1 (14-ounce) can diced tomatoes, drained
- 1/2 cup crumbled feta cheese
Directions
- Preheat oven to 400°F.
- Heat olive oil in a large oven-safe skillet over medium heat. Add bell peppers, onion, garlic, oregano, thyme, red pepper flakes, cumin, coriander, cinnamon, salt and pepper. Cook, stirring occasionally, until vegetables are softened, about 7-8 minutes.
- Stir in diced tomatoes and feta cheese. Transfer skillet to oven and bake until cheese is melted and vegetables are tender, about 15-20 minutes.
- Serve warm.
