Ingredients

  • 1 package of linguini pasta
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil.
  2. Chop the red and yellow bell peppers and onion into small pieces.
  3. Mince the garlic cloves.
  4. Heat the olive oil in a large skillet over medium heat.
  5. Add the chopped vegetables and garlic to the skillet and sauté until the vegetables are softened, about 5 minutes.
  6. Add the linguini to the boiling water and cook according to the package directions.
  7. Drain the cooked linguini and add it to the skillet with the vegetables.
  8. Stir the linguini and vegetables together until combined.
  9. Season with salt and pepper to taste.
  10. Sprinkle the Parmesan cheese over the top and serve.
