In a medium bowl, combine the butter, graham cracker crumbs, 1/4 cup sugar, cinnamon, nutmeg and allspice. Mix until well blended. Press mixture into the bottom of a 9 inch springform pan. Bake for 8 minutes.
In a large bowl, beat the cream cheese until smooth. Gradually beat in the 1 cup of sugar and the flour. Beat in the eggs one at a time. Stir in the vanilla and the caramel topping. Fold in the apples.
Pour batter into the prepared crust. Bake for 40 minutes, or until center is almost set.
Cool, and then chill in the refrigerator overnight.
