Ingredients

  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup ice-cold water
  • 2 cups of vegetables of your choice (e.g. broccoli, cauliflower, carrots, bell peppers)
  • Oil for frying

Directions

  1. In a medium bowl, whisk together the flour, cornstarch, baking powder, and salt.
  2. Slowly add the ice-cold water and whisk until the batter is smooth and lump-free.
  3. Heat oil in a deep-fryer or large pot over medium-high heat.
  4. Cut the vegetables into bite-sized pieces and add them to the batter.
  5. Carefully drop the battered vegetables into the hot oil and fry for 2-3 minutes, until golden brown and crispy.
  6. Using a slotted spoon, remove the fried vegetables from the oil and drain on a plate lined with paper towels.
  7. Serve hot with your favorite dipping sauce.
