Ingredients

  • 2 cups all-purpose gluten-free flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 teaspoon lemon zest

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together the gluten-free flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract, milk, and lemon zest.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Pour batter into the prepared cake pan.
  5. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
