- 4 cups mashed sweet potatoes

- 1/4 cup shredded coconut
- 2 tablespoons vegan butter, melted
Directions
- Preheat oven to 375 degrees Fahrenheit.
- In a large bowl, mix together mashed sweet potatoes, 2 tablespoons vegan butter, maple syrup, cinnamon, nutmeg, and salt. Mix until combined.
- Spread the sweet potato mixture into an 8x8 baking dish.
- In a medium bowl, mix together oats, shredded coconut, and melted vegan butter. Spread the oat mixture over the sweet potatoes.
- Bake in preheated oven for 25-30 minutes, or until the topping is golden brown and crispy.
