Ingredients
3-4 pound boneless beef chuck roast
2 tablespoons olive oil
1 large onion, diced
4 cloves garlic, minced
2 cups beef broth

Directions
Preheat the oven to 350°F.
Heat the olive oil in a large Dutch oven over medium-high heat.
Season the beef chuck roast with salt and pepper.
Add the beef to the hot oil and brown on all sides, about 4 minutes per side.
Remove the beef from the pan and set aside.
Add the diced onion to the pan and cook until softened, about 3 minutes.
Stir in the garlic and cook until fragrant, about 1 minute.
Add the beef broth, balsamic vinegar, Worcestershire sauce, thyme, rosemary, brown sugar, salt, and pepper to the pot.
Stir to combine and bring to a simmer.
Return the beef to the pot and make sure it is submerged in the liquid.
Cover the pot and transfer to the preheated oven.
Braise the beef for 3 hours until it is tender.
Remove the pot from the oven and let rest, covered, for 10 minutes.
Serve the beef pot roast with the cooking liquid. Enjoy!
