Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon sea salt
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 small sweet potato, cubed
  • 1/4 cup vegetable broth

Directions

  1. Heat the oil in a large pot over medium heat.
  2. Add the onion and garlic and cook for 3-4 minutes, until the onion is translucent.
  3. Add the spices, stirring to combine.
  4. Add the beans, tomatoes, sweet potato, and vegetable broth and stir to combine.
  5. Bring the mixture to a simmer and cook for 15-20 minutes, until the sweet potato is tender.
  6. Serve hot and enjoy!
