Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 2 cups chicken broth
  • 1 (14-ounce) can diced tomatoes
  • 1 (4-ounce) can diced green chiles
  • 2 cups shredded cooked chicken
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium-high heat.
  2. Add the onion, garlic and bell pepper and cook until softened, about 5 minutes.
  3. Stir in the flour, cumin, chili powder, and oregano and cook for 1 minute.
  4. Add the chicken broth and tomatoes and bring to a boil.
  5. Add the green chiles and chicken and simmer for 15 minutes.
  6. Stir in the cilantro and season with salt and pepper to taste.
  7. Serve hot.
