Ingredients

  • 5 large potatoes, peeled and cut into 1-inch cubes
  • 1/4 cup vegan butter
  • 1/4 cup almond milk (or other non-dairy milk)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Directions

  1. Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15 minutes, or until the potatoes are fork-tender.
  2. Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or electric mixer.
  3. Add the vegan butter, almond milk, garlic powder, onion powder, salt, and pepper. Continue to mash the potatoes until they are smooth and creamy.
  4. Serve the mashed potatoes warm with a sprinkle of fresh parsley and extra vegan butter, if desired.
