Ingredients

  • 2 tablespoons olive oil
  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 1 large onion, diced
  • 3 stalks celery, diced
  • 3 carrots, peeled and diced
  • 4 potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh parsley, finely chopped
  • Salt and pepper, to taste

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a large Dutch oven or heavy-bottomed pot, heat the olive oil over medium-high heat.
  3. Add the beef cubes and cook until nicely browned on all sides, about 5 minutes.
  4. Add the garlic, onion, celery, and carrots. Cook until the vegetables are softened, about 5 minutes.
  5. Add the potatoes, tomato paste, beef broth, red wine, bay leaves, thyme, and parsley. Stir to combine.
  6. Season with salt and pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
  8. Transfer the mixture to a large baking dish and cover with foil.
  9. Bake in the preheated oven for 1 hour.
  10. Uncover the dish and bake for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.
