Ingredients
2 tablespoons olive oil
2 pounds beef stew meat, cut into 1-inch cubes
4 cloves garlic, minced
1 large onion, diced
3 stalks celery, diced
3 carrots, peeled and diced

2 cups beef broth
1 cup red wine

Directions
Preheat the oven to 350 degrees F.

Add the potatoes, tomato paste, beef broth, red wine, bay leaves, thyme, and parsley. Stir to combine.
Season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
Transfer the mixture to a large baking dish and cover with foil.
Bake in the preheated oven for 1 hour.
Uncover the dish and bake for an additional 30 minutes, or until the beef is tender and the vegetables are cooked through.
Serve warm.
