Ingredients

  • 2 cups cooked mashed potatoes
  • 1 can vegan lobster chunks
  • 4 hot dog buns
  • 1 tablespoon olive oil
  • 1/2 cup vegan mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Directions

  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, combine mashed potatoes and vegan lobster chunks. Mix until well combined.
  3. Heat olive oil in a large skillet over medium-high heat. Add vegan lobster mixture and cook until heated through, about 5 minutes.
  4. Meanwhile, make aioli sauce by combining vegan mayonnaise, lemon juice, garlic powder, smoked paprika, sea salt, and black pepper in a small bowl. Mix until well combined.
  5. Place hot dog buns on a baking sheet. Fill each bun with vegan lobster mixture and top with aioli sauce.
  6. Bake in preheated oven for 10 minutes.
