Ingredients

  • 8 ounces of whole wheat pasta
  • 1 cup of cooked green lentils
  • 2 cups of chopped kale
  • 1 large red onion, thinly sliced
  • 3 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of red pepper flakes
  • Salt and pepper, to taste
  • 1 tablespoon of lemon juice
  • 1/4 cup of nutritional yeast flakes

Directions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced red onion and cook until softened and slightly caramelized, about 7-8 minutes.
  3. Add the minced garlic, dried oregano, and red pepper flakes to the skillet. Cook for an additional 2 minutes, stirring constantly.
  4. Add the chopped kale to the skillet and cook until wilted, about 3-4 minutes.
  5. Stir in the cooked lentils and cooked pasta to the skillet. Season with salt and pepper to taste.
