Vegan Chickpeas with Kale and Cilantro Lime

Ingredients

  • 1 tablespoon of olive oil
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 teaspoons of ground cumin
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of chili flakes
  • 1 can of chickpeas, drained and rinsed
  • 1 cup of vegetable broth
  • 1 bunch of kale, stems removed and roughly chopped
  • 1/4 cup of cilantro, finely chopped
  • 2 limes, zested and juiced
  • Salt and pepper, to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté for 2-3 minutes, or until the onion is translucent.
  3. Add the cumin, smoked paprika, chili flakes, and chickpeas, and stir to combine.
  4. Add the vegetable broth and bring the mixture to a boil.
  5. Reduce the heat to low and simmer for 10 minutes.
  6. Add the kale, cilantro, and lime zest and juice, and stir to combine.
  7. Simmer for an additional 5 minutes, or until the kale is wilted and the flavors are combined.
  8. Season with salt and pepper, to taste.
