1 cup frozen mixed vegetables (corn, peas, carrots)
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup beef broth
1 cup shredded cheddar cheese
Directions
Preheat oven to 375 degrees F.
Prick each potato with a fork several times, then rub with olive oil and season with salt and pepper. Bake potatoes for 45 minutes or until softened.
Meanwhile, heat a large skillet over medium-high heat. Add ground beef and cook until no longer pink. Add onion, garlic, Worcestershire sauce, paprika, oregano, salt, and pepper. Cook for another 5 minutes.
Add frozen mixed vegetables to the skillet and cook for an additional 3 minutes.
In a separate small saucepan, melt butter over medium heat. Add flour and stir until combined. Slowly add beef broth, stirring constantly. Cook until sauce thickens.
Add beef mixture to the saucepan and stir until combined. Remove from heat.
Remove potatoes from oven and split open. Divide beef mixture among the potatoes, then top with shredded cheese.
Bake for an additional 10 minutes or until cheese is melted and bubbly.
