Roasted Parmesan Rosemary Potatoes

Ingredients

  • 4-5 medium potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried rosemary

Directions

  1. Preheat oven to 400 degrees F.
  2. In a large bowl, combine potatoes, olive oil, salt, and pepper and toss to coat.
  3. Spread potatoes in a single layer on a baking sheet.
  4. Bake for 20 minutes, stirring once halfway through.
  5. Remove from oven and sprinkle with parmesan cheese and rosemary.
  6. Return to oven and bake for an additional 10 minutes, or until potatoes are golden and crispy.
  7. Serve immediately.
