Ingredients

  • 1 red bell pepper, sliced into strips
  • 1 yellow bell pepper, sliced into strips
  • 1 red onion, sliced into strips
  • 2 zucchini, sliced into rounds
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the bell peppers, onion, zucchini, olive oil, balsamic vinegar, garlic, mustard, oregano, basil, salt and pepper. Toss to coat evenly.
  2. Preheat the grill to medium-high heat.
  3. Grill the vegetables for 8-10 minutes, or until they are softened and lightly charred.
  4. Serve warm.
