Preheat oven to 400 degrees F. Line a baking sheet with foil and set aside.
Clean and peel the sweet potato. Cut into thin slices and place on the prepared baking sheet.
Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Bake for 15 minutes, or until the sweet potatoes are tender and lightly browned.
Meanwhile, in a medium bowl, combine the black beans, corn, red pepper, red onion, cilantro, olive oil, lime juice, chili powder, salt and pepper. Mix until everything is evenly combined.
Remove the sweet potatoes from the oven and let cool slightly.
To assemble the wraps, place a wrap tortilla on a plate. Top with a few slices of sweet potato, followed by the bean and vegetable mixture. Fold the wrap up, and enjoy!
