This recipe takes the classic dorm room staple, cup of noodles, to the next level by incorporating fresh ingredients and homemade broth. Perfect for a quick and comforting meal that is both easy and satisfying.

Ingredients

  • 4 cups chicken or vegetable broth
  • 2 packs of ramen noodles
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup sliced mushrooms
  • 1 cup shredded cooked chicken or tofu
  • 2 green onions, thinly sliced
  • 1 boiled egg, halved
  • 1/4 cup corn kernels
  • 1/4 cup sliced carrots
  • Sriracha or chili paste, for serving

Directions

  1. In a large pot, bring the broth to a simmer.
  2. Add the soy sauce, sesame oil, mushrooms, chicken/tofu, green onions, corn, and carrots. Let simmer for 10 minutes.
