Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 cups fresh peaches, peeled and diced
- 1/2 cup brown sugar
- 1/2 tsp ground cinnamon
- 1/4 cup chopped pecans
- 1/4 cup all-purpose flour
- 2 tbsp cold butter
Directions
- Preheat oven to 350°F and grease a 9x9 inch baking dish.
- In a medium bowl, whisk together 2 cups flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together 1/2 cup butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- Mix in sour cream until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread half of the batter into the prepared baking dish.
- In a separate bowl, combine peaches, brown sugar, and cinnamon. Spread over the batter in the dish.
- In a small bowl, mix together 1/4 cup flour, pecans, and 2 tbsp butter until crumbly. Sprinkle over the peaches.
- Spread the remaining batter over the peaches and streusel topping.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
