Ingredients
1 tablespoon olive oil
1 onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 pound ground turkey
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (4-ounce) can diced green chiles
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn, drained
1 cup enchilada sauce
12 (6-inch) flour or corn tortillas
2 cups shredded Mexican blend cheese
Directions
Preheat oven to 350 degrees F.
Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
Add the garlic and cook for 1 minute.
Add the turkey, chili powder, cumin, paprika, salt, and pepper. Cook, stirring occasionally, until the turkey is cooked through, about 8 minutes.
Stir in the green chiles, black beans, and corn and cook until heated through, about 5 minutes.
Remove the skillet from the heat and stir in 1/2 cup of the enchilada sauce.
Spread 1/4 cup of the remaining enchilada sauce in the bottom of a 9x13-inch baking dish.
Spoon about 1/3 cup of the turkey mixture into each tortilla. Roll up the tortillas and place them seam-side down in the baking dish.
Pour the remaining enchilada sauce over the top of the enchiladas and top with the cheese.
Bake for 20 minutes, or until the cheese is melted and bubbly.
