Ingredients
- 2 tablespoons olive oil
- 1/2 pound bacon, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 pound ground turkey
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 4 cups chicken broth
- 1 cup pearled barley
- 2 cups diced okra
Directions
- In a large pot, heat the olive oil over medium heat. Add the bacon and cook for 3-4 minutes, until bacon is crispy.
- Add the onion and garlic and cook for an additional 3 minutes, until the onion is softened.
- Add the ground turkey and cook for about 7 minutes, stirring occasionally, until the turkey is cooked through.
- Add the thyme, oregano, basil, black pepper, cayenne pepper, and salt and stir until combined.
- Add the chicken broth, barley, and okra and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 15-20 minutes, until the barley is cooked through and the soup is thickened.
- Serve warm.
